With a Quarter Beef, you will receive 82+ pounds of grass-fed, grass-finished beef, delivered to your door. It will be portioned out approximately as follows:
- 25% Steaks (Ribeye, New York, Tenderloin, Sirloin, Flat Iron, Flank/Flap, Skirt)
- 35% Roasts and Savory Cuts (Rump/Round Roast, Chuck/Shoulder Roast, Short Ribs, Osso Bucco, Picanha/Tri-tip, Stew Meat)
- 40% Ground Beef
The individual cut counts come out about like this (actual cuts, counts, and weights vary by animal).
- 4 Ribeye steaks
- 4 New York steaks
- 4 Tenderloin steaks (Filet Mignon)
- 4 Sirloin steaks
- 2-3 Sirloin Cap steaks
- 3 Top Round steaks
- 2 Flat Iron steaks
- 1-2 Denver steaks
- 1-2 of Flank steak, Skirt steak, or Flap steak
- 2-3 Sirloin Tip steaks
- 1-2 Rump/round roasts
- 1-3 Chuck/Shoulder roasts
- 2-4 Short Rib packages
- 1-2 of Brisket, Tri-tip, or Picanha

You can choose to have your beef delivered in June, September, or November/December. We will contact you before shipment/delivery to coordinate with your schedule.
All beef is dry-aged for 14-17 days for optimal flavor and tenderness.
